Zucchini with Tomatoes

Ingredients:
- ¼ cup vegetable broth. 1 onion, sliced. 1 green bell pepper, sliced
- . 3 cups sliced zucchini
- . ¼ teaspoon black pepper.
- 4 large tomatoes, chopped.
- 2 tablespoons fresh chopped parsley .
Directions:
- Heat broth in a large skillet over medium heat. Add onion and green pepper. Cook until vegetables are tender. Add more liquid if necessary.
- Add zucchini, black pepper, tomatoes, and parsley. Simmer for 30 minutes.
