Green Pea- Spinach Soup Recipe for Weight Loss
Yield: 4 servings (1 ¾ cups each)
Ingredients:
- 2 ½ cups frozen green peas
- 1/3 cup chopped onion
- 2 ½ cups nonfat chicken broth
- 1 teaspoon dried basil leaves
- ¾ cup chopped fresh or thawed frozen spinach
- 1 ½ cups nonfat buttermilk
Directions:
- Combine green peas, onion, chicken broth, basil, and spinach in a saucepan. Simmer for 15 minutes or until the onion is tender.
- Transfer the green pea-spinach mixture to a blender or food processor and puree
