Chilled Yellow Squash Soup Recipe For Weight Loss
Yield: 4 servings ( 1 ¾ cup each)
Ingredients:
- 2 1/3 cups nonfat vegetable broth
- 1 clove garlic, minced
- 3 cups chopped yellow summer squash
- ¾ cup chopped carrot
- ½ cup chopped celery
- ¾ cup frozen green peas
- ½ cup water
- ½ teaspoon dried dill leaves
- 1/3 cup nonfat sour cream
Directions:
- Place broth, garlic, yellow summer squash, carrot, celery, gren peas, water, and dill in a large soup pot. Bring to a boil.
- Cover, reduce heat, and simmer for 15 minutes.
- Transfer soup to a blender or food processor and process until smooth.
- Transfer to a bowl, stir in sour cream, and chill for at least 1 hour.
