Tomato and Potato Curry Weight Loss Recipe
Yield: 6 servings
Ingredients:
- ¼ cup vegetable broth
- 2 onions, sliced
- Pinch of ground ginger
- 1 teaspoon dried thyme leaves
- 1 teaspoon dried marjoram leaves
- 2 tablespoons fresh chopped parsley
- 1 teaspoon dried basil leaves
- 1 teaspoon dried dill leaves
- ½ teaspoon ground turmeric
- 2 cups chopped mushrooms
- 6 small potatoes, quartered
- 3 fresh tomatoes, thickly slicked
- 1 tablespoon lemon juice
- 2 teaspoons curry powder
Directions:
- Heat broth in a large skillet or heavy pot. Add onions, ginger, thyme, marjoram, parsley, basil, dill, and turmeric. Cook and stir onions and spices for 5 minutes, add liquid as needed.
- Add mushrooms. Cook and stir for 5 minutes.
- Add potatoes. Cook and stir for 3 more minutes.
- Add tomatoes and cook, uncovered for 20 minutes.
