Orzo With Vegetables Recipe for Weight Loss
Yield: 4 servings
Ingredients:
- 1 cup orzo
- ¾ cup broccoli florets, steamed and chopped
- ¾ cup cauliflower florets, steamed and chopped
- ½ cup chopped red bell pepper
- 1 teaspoon dried dill leaves
- 2 tablespoons lemon juice
- ¼ teaspoon black pepper
Directions:
- Bring a large pot of water to a roiling boil. Stir in orzo and return to boiling. Cook, stirring occasionally for 10 minutes until the orzo is tender.
- Drain orzo.
- Toss orzo with steamed broccoli and cauliflower, red pepper, dill, lemon juice, and black pepper.
