Applesauce-Oatmeal Cookies Recipe
Yield: 30 servings (2 cookies each)
Ingredients:
- 1 cup old-fashioned rolled oats
- 2 ½ cups unbleached all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt (optional)
- 1 cup brown sugar, firmly packed
- ¾ cup plus 2 tablespoons applesauce
- 1 egg white, lightly beaten
- 1 tablespoon vanilla extract
- 1 cup raisins
Directions:
- Preheat oven to 350 degrees. Use a nonstick baking sheet spray the sheet with vegetable cooking sprya.
- Combine oats, flour, baking soda, cinnamon, and salt
- In a separate bowl, beat together brown sugar, applesauce, egg white, and vanilla until well combine.
- Stir wet ingredients into dry ingredients. Gold in raisins.
- Drop cookie dough on sheet by the tablespoonful. Leave 1 ½ inches between cookies.
- Bake for 15 minutes. Let cookies cool on a wire rack.
