Garden Tomato Soup
Yield: 6 Servings
Ingredients:
- ¼ cup water,
- 1 clove garlic
- , ¾ cup chopped scallions,
- 1 cup chopped celery
- , ¾ cup diced zucchini,
- ¾ cup diced yellow summer squash
- , ½ cup chopped green bell pepper,
- ¾ cup thinly sliced carrots,
- ¼ teaspoon black pepper.
Directions:
- Heat water in a soup pot over medium heat. Add garlic, red onions, scallions, and celery. Stir over medium heat until veggies are tender.
- Add zucchini, summer squash, green pepper, and pepper. Bring to a boil.
- Simmer for 25 minutes.
