Baked Potatoes with Baked Beans Recipe for Weight Loss
Yield: 4 servings (1 potato each)
Ingredients:
- 4 warm baked potatoes, cut in half lengthwise
- ½ cup nonfat cottage cheese
- 1 cup canned vegetarian baked beans, drained and rinsed
- ½ cup grated nonfat mozzarella cheese
- ½ cup chopped scallions
Directions:
- Preheat oven to 375 degrees.
- Spread 1 tablespoon cottage cheese over each potato half.
- Add ¼ cup baked beans to each potato half.
- Top the baked beans on each potato half with 1 tablespoon cheese and 1 tablespoon scallions.
- Bake until cheese melts, about 5 to 10 minutes.
