Potato-Tomato Curry
Yield: 6 servings
Ingredients:
- ¼ cup vegetable broth
- 2 onions, sliced
- Pinch of ground ginger
- 1 teaspoon dried thyme leaves
- 1 teaspoon dried marjoram leaves
- 2 tablespoons fresh chopped parsley
- 1 teaspoon dried basil leaves
- 1 teaspoon dried dill leaves
- ½ teaspoon ground turmeric
- 2 cups chopped mushrooms
- 6 small potatoes, quartered
- 3 fresh tomatoes, thickly slicked
- 1 tablespoon lemon juice
- 2 teaspoons curry powder
Directions:
- Heat broth in a large skillet or heavy pot. Add onions, ginger, thyme, marjoram, parsley, basil, dill, and turmeric. Cook and stir onions and spices for 5 minutes, add liquid as needed.
- Add mushrooms. Cook and stir for 5 minutes.
- Add potatoes. Cook and stir for 3 more minutes.
- Add tomatoes and cook, uncovered for 20 minutes.
- Add lemon juice and cook for 5 to 7 minutes more or until potatoes are tender.

Ingredients:
- 1 cup unbleached all-purpose flour
- ¾ cup sugar
- ½ cup unsweetened cocoa
- 2teaspoons baking powder
- ½ cup skim milk
- ¼ cup applesauce
- 1 teaspoon vanilla extract
- ¾ cup brown sugar, frmly packed
- 1 ¾ cups hot water
Directions:
- Preheat oven to 350 degrees. Lin an 8-inch-square baking pan with a baking liner of spray lightly with vegetable cooking spray.
- Combine flour, sugar, ¼ cup of the cocoa, and the baking powder in a mixing bowl.
- Combine milk, applesauce, and vanilla ina separate bowl.
- Stir wet ingredients into dry ingredients.
- Spoon batter into pan.
- Combine brown sugar, remaining ¼ cup cocoa, and water.
- Pour over batter.
- Bake for 40 minutes.
- Remove from oven and cool in pan.
- Cut into 16 squares.
