Starter:
Chilled Yellow Squash Soup
Yield: 4 servings ( 1 ¾ cup each)
Ingredients:
- 2 1/3 cups nonfat vegetable broth
- 1 clove garlic, minced
- 3 cups chopped yellow summer squash
- ¾ cup chopped carrot
- ½ cup chopped celery
- ¾ cup frozen green peas
- ½ cup water
- ½ teaspoon dried dill leaves
- 1/3 cup nonfat sour cream
Directions:
- Place broth, garlic, yellow summer squash, carrot, celery, gren peas, water, and dill in a large soup pot. Bring to a boil.
- Cover, reduce heat, and simmer for 15 minutes.
- Transfer soup to a blender or food processor and process until smooth.
- Transfer to a bowl, stir in sour cream, and chill for at least 1 hour.

Ingredients:
- 1 cup orzo

- ½ cup chopped red bell pepper
- 1 teaspoon dried dill leaves
- 2 tablespoons lemon juice
- ¼ teaspoon black pepper
Directions:
- Bring a large pot of water to a roiling boil. Stir in orzo and return to boiling. Cook, stirring occasionally for 10 minutes until the orzo is tender.
- Drain orzo.
- Toss orzo with steamed broccoli and cauliflower, red pepper, dill, lemon juice, and black pepper.

Directions:
- Place blueberries, buttermilk, sugar, and orange juice in a food processor or blender. Process until smooth.
- Pour into a square freezer-safe pan.
- Freeze for 2 hours and 30 minutes, stirring frequently to equally distribute the ice crystals. Allow to soften slightly at room temperature before serving.
